Ice Cream School! Going for the Golden Cone
When I mentioned I was going to Ice Cream School, most people laughed. What is Ice Cream School? Is it a place where you go away for a week to try millions of different flavors of ice cream? I kind of enabled their sarcasm by telling them if I place in the top of the class I get a “golden cone”. I totally made this up in my head but I also told myself this was real.
Ice Cream School aka the Penn State Ice Cream Short Course is an INTENSE course about all of the different sciences, concepts, formulas, calculations, laws, flavors, sensory evaluations and much more that goes into our beloved frozen treat. Believe me, I don’t even think I was prepared for this and I love ice cream.
There were 125 people from around the world that attended this course! Some people were Food Scientists from big brands like Nestle, others were entrepreneurs like me and some were even there on vacation! I actually spoke to one vacationer about how he thought he would only be trying ice cream all week…poor guy, who wants to do math on vacation!? Needless to say my time at the ICSC (Ice Cream Short Course) was amazing. I met so many new friends and it’s always great to be in an atmosphere surrounded by people who are passionate about the same things as you. And when that passion is ice cream? Well come on, this group of people was AWESOME!
So, things I’ve learned during my week at Ice Cream School? Well, to be transparent with you…going into this class I totally thought (along with several others there) that I could continue using pasteurized milk in my recipes and sell that using my commercial batch freezer. WRONG. In order to do that I have to buy a pasteurizer. I’ve also learned a lot of new ways to calculate my recipe ingredients by using proper ice cream formulas. Yep, that’s a thing! I tried several different ice cream recipes from big brand producers and have to say they don’t come close to mine ;) Overall, I learned a TON and can’t wait to bring that knowledge into my recipes for this summer! I thought I knew and loved ice cream so much before this course but now I have a whole new appreciation for it.
I’m hoping we’ll eventually be able to have some ice cream classes at The WooHoo and I’ll be able to share some of my tidbits with you!
BTW there was homework and an exam for this course! Of course all of the Food Scientists placed in the top of the class but I bet my recipe could beat theirs if we had a taste off! I totally got short scooped but in my heart I received the Golden Cone!
